  • 2 cups powdered sugar
  • 4 lemons
  • ¼ cup lemon juice (approximately juice from 2 lemons)
  • lemon zest (the zest from 2 lemons)
  • 3 eggs
  • 13.25 oz strawberry cake mix ( 1 box)

Instructions

  • Gather your eggs, melted butter, strawberry cake mix, and milk. Mix with a fork or an electric hand mixer until silky smooth.
  • Spoon strawberry batter into greased mini silicone muffin molds. Bake for 10-13 minutes at 350°F. Set aside to cool completely before icing.
  • Let's whip up the delightful lemon drizzle icing! Start by combining 2 cups of powdered sugar in a mixing bowl with ¼ cup of fresh lemon juice and the zest from one lemon. Mix with a fork, adding more lemon juice, if desired, to reach your ideal consistency.
