Lazy Slow Cooker Red Beans

Savory Cajun red beans and sausage served with cooked white rice, lime, and garlic on a wooden tray. Perfect comfort food recipe for easy family dinners or meal prep.
Just pop all the ingredients in a slow cooker and let it do its thing on low for 8 to 10 hours.

Ingredients

  • 1 lb Red Kidney Bean (dry)
  • 1 green bell pepper (diced)
  • 1 onion (diced)
  • 4 celery ribs (sliced or diced)
  • 2 garlic cloves (minced)
  • 32 oz box of low sodium chicken broth
  • 1 cup water
  • 1 Ham hock (approximately ½-1lb)
  • 13.5 oz Andouille sausage (sliced or diced)
  • a few dashes of Creole Seasoning (to taste)

Instructions

  • Put all of your ingredients into the slow cooker and set it on low for 8-10 hours. Stir ingredients at the beginning and at the end of cooking.
  • Taste your cooked red beans and add additional seasoning if desired. Serve over rice.
