- 1 lb Red Kidney Bean (dry)
- 1 green bell pepper (diced)
- 1 onion (diced)
- 4 celery ribs (sliced or diced)
- 2 garlic cloves (minced)
- 32 oz box of low sodium chicken broth
- 1 cup water
- 1 Ham hock (approximately ½-1lb)
- 13.5 oz Andouille sausage (sliced or diced)
- a few dashes of Creole Seasoning (to taste)
Put all of your ingredients into the slow cooker and set it on low for 8-10 hours. Stir ingredients at the beginning and at the end of cooking.
Taste your cooked red beans and add additional seasoning if desired. Serve over rice.
