- 16 oz dry gnocchi (found in the pasta aisle)
- 1 pint grape tomatoes
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- 5 links Italian Sausage (Mild or Hot - I used chicken sausage)
- ¼ cup shredded cheese such as mozzarella (parmesan or both)
Preheat oven to 425º F. Line a baking sheet with parchment paper or a silicone mat. Add tomatoes and gnocchi to the pan and drizzle with olive oil. Sprinkle with salt, pepper and garlic powder then toss to evenly coat. Make sure gnocchi pieces are broken apart and spread evenly across the pan.
Nestle the sausage links in between the tomatoes and gnocchi. Bake for 10 minutes. Flip the sausages and stir the gnocchi and tomatoes. Return to the oven a cook for 10 more minutes or until sausage is throughly cooked (165º F when taken with a meat thermometer).
Slice sausage into bite sized pieces and return to the pan. Sprinkle with desired cheese and return to the oven for a couple of minutes until melted. Serve and enjoy this quick and easy dinner!
- Add a little extra oil if using chicken or turkey sausage.
