- 1 lb lean ground beef
- yellow onion diced (diced)
- red bell pepper (diced)
- yellow bell pepper (diced)
- 1 packet store-bought taco seasoning (or homemade taco seasoning)
- 2 cloves garlic minced (minced)
- 14 oz tomato sauce
- 2 cups chicken broth or beef broth
- 12 oz dried pasta (Orecchiette or Bow Tie)
- ½ cup shredded Mexican blend cheese
- ¼ cup sour cream
- cilantro
Homemade Taco Seasoning Blend
- 1 Tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- ¼ tsp cayenne pepper
- ½ tsp oregano
- ½ tsp salt
- ½ tsp pepper
Add ¼ cup of the beef broth and heat over medium heat using a high-sided skillet.
Add ground beef, diced onion, peppers, minced garlic, and taco seasoning to the skillet. Cook until the meat is fully cooked and no longer pink and the vegetables are softened. Stir occasionally.
Add tomato sauce, dried pasta, and the rest of the broth to the skillet. Stir ingredients together. Let the mixture simmer for approximately 10-13 minutes or until the pasta is cooked thoroughly. Add more broth if you need to.
Add the sour cream once the pasta is fully cooked.
Remove the skillet from the heat and top with Mexican cheese. The heat from the pasta will melt the cheese. Garnish with freshly chopped cilantro and serve warm.
- Cheese can be melted under the oven broiler. Just make sure to use an oven-safe skillet.
