Easy Game Day Chili

This Easy Game Day Chili can be made in the slow cooker or stovetop for convenience. It's perfect for cold nights, game days, and no-fuss weeknight dinners!

Ingredients

Ingredients:

  • 2 lbs ground beef
  • ½ onion (diced)
  • 10 oz can of Original Rotel
  • 8 oz canned tomato sauce
  • 15.5 oz canned beans (rinsed-black, kidney or pinto)
  • 8 oz water
  • 1 pkg Carol Shelby's Chili Mix
  • 1 cup frozen corn (optional)

Optional Toppings:

  • sour cream
  • shredded cheese
  • diced tomatoes
  • diced red onion

Instructions

Slow Cooker

  • Step 1: In a large pan over high heat, brown ground beef and onions. Drain fat and transfer to a slow cooker (check out my slow cooker from Green Life that is stove top safe!).
  • Step 2: Stir in Rotel, rinsed beans, tomato sauce, water, and corn if using. Sprinkle half of the seasoning bag into the slow cooker and stir. Cover and cook on high for 1 hour or low for 2 hours. Taste the chili and add more of the seasoning mix if you prefer more intense flavor. *This chili mix comes with a packet of cayenne pepper - it's super spicy, so I serve it separately for those who want to control the heat. It also comes with masa flour for thicker chili. If you'd like to use it, whisk 1/3 cup water with the flour and stir back in to the chili. Let cook for another half hour.
  • Step 3: Dish up generous portions of our easy game day chili in to bowls and garnish with your favorite toppings!

Stovetop

  • Step 1: In a large pot over high heat, brown ground beef and onions. Drain fat.
  • Step 2: Stir in Rotel, tomato sauce, water, and corn if using. Sprinkle half of the seasoning bag into the pot and stir. Cover and reduce heat to a simmer, stirring occasionally, for 30 minutes. Taste the chili and add more of the seasoning mix if you prefer more intense flavor. Stir in rinsed beans and continue to cook for 5 minutes. *This chili mix comes with a packet of cayenne pepper - it's super spicy, so I serve it separately for those who want to control the heat. It also comes with masa flour for thicker chili. If you'd like to use it, whisk 1/3 cup water with the flour and stir back in to the chili. Let cook for another 5 minutes.
  • Step 3: Dish up generous portions of our easy game day chili in to bowls and garnish with your favorite toppings!

Notes

  • Any chili packet will work, but Carol Shelby's is our favorite!
  • Serve with rice, crusty bread, or tortilla chips.
  • It also makes a great topping for hot dogs and baked potatoes.
