Ingredients

  • cups oats
  • 2-3 bananas (ripe)
  • ¼ cup peanut butter
  • 1 ½ cups milk
  • ¼ cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup protein powder (optional)
  • ¼ cup shredded coconut flakes (optional)
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ cup semi-sweet chocolate chips

Instructions

  • Place the bananas into a mixing bowl and mash with a fork. Add the milk, maple syrup, extract, and peanut butter and blend using a fork. Add in the dry ingredients and the semi-sweet chocolate chips and combine. Bake in a parchment paper-lined baking dish at 375º F for 35-40 minutes, or until a toothpick inserted into the center comes out out clean. Cool slightly before serving. Top with sliced almonds, bananas, chocolate chips, Greek yogurt, or drizzle with warm peanut butter.

Notes

  • Top with sliced strawberries.
  • Leftovers can be refrigerated in a tightly sealed container for up to three days.
