Ingredients

Salad Ingredients

  • 2 cups diced cooked chicken (store-bought sliced cooked chicken used)
  • ½ cup sliced almonds
  • ½ cup apple (finely diced)
  • cup dried cranberries
  • cup thinly sliced green onions
  • ½ cup finely chopped celery

Dressing Ingredients

  • cup mayonnaise
  • 3 Tbsp sour cream
  • 1 Tbsp Dijon-style mustard
  • 2 Tbsp apple cider vinegar
  • 1-1½ Tbsp honey
  • 1 Tbsp white wine
  • pepper to taste

Instructions

  • Whisk together the mayonnaise, sour cream, apple cider vinegar, mustard, white wine, and pepper. Set aside.
  • Gather the rest of the ingredients.
  • If the chicken pieces are large, use an electric hand mixer on low speed to break them down into tiny pieces, essentially mimicking a very fine dice.
  • Combine the diced cooked chicken, sliced almonds, finely diced apple, dried cranberries, thinly sliced green onions, and finely chopped celery in a large mixing bowl.
    Pour the dressing on top and mix.
  • Refrigerate the chicken salad for at least 10 minutes to let the flavors marinate.
  • Serve in sandwich bread, with apple slices, on lettuce boats or crackers.
