Chicken Caesar Skewers

This chicken dish is so easy, but still full of flavor! It requires very little prep and grills up in no time! It's great paired with a salad or served with your favorite sides. It's a perfect weeknight dish or easy weekend lunch!

Ingredients

  • 1 ½ lbs boneless, skinless chicken breast
  • 4 oz caesar dressing (we use Simply Creamy Caesar)
  • metal or wood skewers

Optional:

  • romaine lettuce
  • parmesan cheese
  • croutons

Instructions

  • Pat chicken breasts dry and place on a cutting board. Slice the breasts into strips and thread on to skewers. Use about 3 strips per skewer and poke through 2-3 places on each strip to secure them.
  • Place skewers in a dish big enough to hold them and pour half of the dressing over them. Rotate skewers and pour in remaining dressing making sure to evenly coat all of the chicken. Cover and marinate for at least 1 hour.
  • Heat grill to medium heat and carefully place skewers on grill grate. Discard remaining marinade. Flip every 2 minutes for about 8-10 minutes. Remove from grill when cooked through (should be 165º F when taken with a thermometer).
  • Serve over romaine lettuce with parmesan and croutons for an easy dinner salad!

Notes

  • If you're unable to grill, you can use your oven broiler and a broiler pan. Place oven rack 6 inches below broiler.
  • To quickly crisp up your lettuce, place it in a bowl with water and ice cubes for a few minutes.
