Spicy Cajun Sheet Pan Dinner

Ingredients:
- olive oil
- large red onion
- garlic cloves
- bell peppers (yellow and red)
- kidney beans (canned; drained)
- ground spicy pork sausage
- ground beef
- cajun seasoning
- ground cumin
- dried oregano
- tomato paste
- salt & pepper

- limes (cut into wedges)
- cherry tomatoes (halved)
- sour cream
- large or small tortillas

Step-by-Step Directions:
Step 1: Preheat oven to 425 º F. Chop the peeled onion into chunks. Chop the garlic. Wash, halve, de-seed, and cut the bell peppers into chunks. Place vegetables into a mixing bowl and add the drained beans, tomato paste, and olive oil. Coat the vegetables and the beans with olive oil and tomato paste. Set aside.
Step 2: Place the ground beef and pork in a mixing bowl. Add the Cajun seasoning, oregano, cumin, salt, and pepper. Using food-safe gloves or a wooden spoon, combine the ingredients. Spread the mixture onto a lined or lightly greased sheet pan. Bake in the preheated oven for 5 minutes, then remove it from the oven.
Step 3: Spoon the vegetable and bean mixture over the beef and pork. Reduce the oven temperature to 375 º F and bake for another 10-15 minutes until the vegetables are tender and the meat is no longer pink.
Step 4: Garnish with juice of half a lime, roughly chopped cilantro, halved cherry tomatoes, sour cream, and leftover lime wedges. Serve with warmed tortillas, and enjoy!
